People around the world enjoy many different kinds of teas. But all these teas are made from the leaf of the same tea plant (which originated in China and belongs to the camellia family)

Don't you find it surprising that teas with different flavor and aroma are made from the same leaf?

EThere are three different basic production methods. Oolong is a semi-fermented tea.
Even though the raw ingredient is the same, different teas are produced by different production methods, namely the difference in the extent of fermentation. Unfermented (green) tea is produced without fermenting the leaves; semi-fermented (oolong) tea is made by fermenting the leaves to some extent; while fermented (black) tea is made by fermenting the leaves fully.
